这类餐厅过去一直是很多社区里最有“人情味”的存在。价格不算便宜，但大多数家庭还能接受；环境和体验也比快餐更完整，适合聚餐、聊天、见朋友。可现在，随着食材、人工、燃油、供应品甚至员工住房成本不断上涨，这类“中间价位”餐厅的经营空间正被迅速压缩。
很多老板不是没有涨价，而是涨价也很难解决问题。一方面，不涨价扛不住；另一方面，涨太多又怕把顾客推走。文中提到，去年大多数独立餐厅的菜单涨幅控制在10%以内，但也已经有一部分涨到10%以上。问题是，即使这样，很多店还是没有能力给员工加薪，甚至连员工住房支持都难以维持。
更值得注意的是，这不只是餐厅老板自己的难题。如果这类平价但有品质的本地餐厅越来越少，社区也会失去很多“第三空间”——也就是人们除了家和工作之外，最常去交流、聚会、建立关系的地方。
说白了，如果未来只剩下越来越贵的高端餐厅和越来越标准化的快餐连锁，那美国餐饮业中最有人情味、最能服务普通家庭的那一层，可能真的会越来越少。
